Citrus and Beet Spinach Salad

Prep Time: 10 Min Servings: 4 servings Difficulty: very easy


  • 14 oz. Can of beets
  • 2 Large navel oranges
  • 1 Small red onion, thinly sliced
  • 10 oz. Spinach leaves


  • 1⁄4 cup Canola oil
  • 1⁄4 cup Red wine vinegar
  • 1 tbsp Raspberry jam
  • 3⁄4 cup Walnut pieces, toasted


  1. Drain and quarter beets.
  2. Peel and section the navel oranges.
  3. Toss all ingredients except dressing in a large bowl.
  4. Mix oil, vinegar, jam and stir.
  5. Add dressing to vegetables and top with walnuts and serve.
